I suppose you already trust the mint to not run off with funds but you also trust them to make sure they keep enough capacity to handle the ecash they have minted. Got it 👍

Correct! This is the same for any other custodian that has a Lightning balance. The channels must be maintained independent of the liabilities to the users.
