The valley is one of my favorite places in the US. Absolutely beautiful, next time I’m up there I’ll have to see Salatins operation in person.
Well they are technically open 24/7 so people can come check it out anytime.
It’s amazing how beautiful and productive the valley still is after it was so over-farmed during the civil war. I think I remember reading they lost multiple feet of top soil in that 5 year period
I wish I had been smarter and more in tune with this sort of thing back when I lived there.
I spent a good bit of time in my late teens/early “adulthood” less than 25 miles from polyface and I only figured that out recently.
Oh well, my journey is different. There were things I had to learn and experience first, I suppose.
