every major relay will censor undesirable political or scientific opinions.

then people will say “but the protocol layer hasn’t been censored”

Once a relay starts censoring, mass exodus to other relays will follow

But they gonna have the option to start own relay.

Nah. Relays, even those carrying heavy traffic, are and will remain simple enough to spin up that competition will respond in kind.
