sooo, is that a good or a bad thing?

Like anything it has tradeoffs. Longer shelf life, less likely to spoil. But it may also remove beneficial nutrients too.

but honey doesn’t really go bad, this is what I’ve been given to understand anyway

I think manufacturers heat honey mostly to keep it flowing for longer. Raw pure honey will crystallize in a month or less.
