I’m a big fan of endless summer hydrangeas for blues because they’re pretty easy to get there with some used coffee grounds. I’ve never seen a truly blue dahlia but I’ve seen purple ones

We grew Edisons (I think that's what it's called) last year they are dinner plate variety last about a week in vase.
