this sound true. it's the same in Germany and the Nordics that the foodie business (both preparation and delivery) is dominated by immigrant labor.

How has the wages in the food business fared fir the past 10 years though?

Minimum is 40-50%higher than 13 years ago, my own salary doubled in that time with German knowledge, experience and negation skills increasing. Gladly I have successfully escaped the industry:D
