When media is uploaded to Facebook I get that the data is stored on Facebook servers.

Depends on a client, if you are using Damus then it defaults to nostr.build

Yep. This is a good answer. Each client may have a different way to store media. I guess technically you could also "embed" your image in a note but that would make the note VERY heavy so it won't load properly on clients (and also it won't be supported by most of them). But it's technically still a possibility.
You have several options. By default you can save it wherever you think is convenient, it can be a cloud or an image server you trust.
Secondarily #Nostr has some protocols such as the NIP-94 which allows you to save the images or videos as a #Nostr event on a server of your trust or the NIP-95 which allows you to save the images or videos in relays. I think this is the ultimate element of trust, since you can use a public or pay relay, or even create your own relay for your files.
