Are hashtag follows in the various clients, client dependent? There is nothing in the protocol or profiles that stores them, correct? #asknostr

Amethyst and primal have had these for a long time. But they don’t appear to carryover, so I assume they are not part of the profile.

They don't carry over, since not all clients use/support that feature.

many clients support searching for tags, some even in the global/following feed chooser. tags in nostr are part of the data structure of the notes sent to the relays. They index them, so search is very fast.
