Does it make sense to stash beans in a preppers barrel of food. For say. 5, 10 or longer years?

Not really.
If stored air tight in a cool dark place, green unroasted coffee can last for up to 2-3 yrs without total degradation.
Roasted coffee beans are like any other food product. They will not spoil or make you sick, that I know of, but they will oxidize in less than two-three months & have lost their richness and luster.
Try to store your coffee in an airtight container, in whole bean format, in a cool dark place with low humidity. Grind fresh just before brewing.
