This was an on chain transaction that I did with Blue Wallet, which gives you self-custody. It's pretty easy actually. I don't know what you exactly want to know.
My bad I was not very clear with my question. Perhaps I misunderstood the process. Let me clarify.
How do you exchange btc to cash? Is it online or face-to-face hand in to stranger. Bear with me, noob here. ☺️
I usually go through people I got to know over the years online or who I have met at an event like a Bitcoin meetup or conference. I ask them if they know someone in their area who wants to change with me. And then meet these people. It's pretty easy. Important is that you can trust your peer. If you're on the btc receiving side, then wait for at least one confirmation on the blockchain before you hand over the cash.

Nice work - what brings you to NZ? FYI there is a local Discord called Cryptocurrency NZ, effectively a bulletin board that connects bitcoiners (and shitcoiners 😶) who are looking to buy/sell. I’ve done a number of F2F trades this way! You’ll find there’s a very active community here. Also there’s a Bitkiwi event taking place in Wellington on 26 October - usually a good place to connect.
