Last thing to do is that I need to find a way to keep my boot config on a microSD; in case it breaks, its much easier to mount it on another system and monkeypatch it. o.o...

Nice work ser. sounds like environment is coming along. A thought, (sorry if you have considered and discarded this idea already) have you tried raid 01 with external scsi for one drive? The striping helps with mirror performance and the rebuild still quick. Have run it on big iron lots for this purpose. Need fast disk and controller if running massive production database but in most cases it has served me well.
The furthest I had gone with RAID so far is mdadm + ext4. I am still exploring btrfs - but I did hear about using iSCSI over the network to do some truely crazy stuff; like NFS, but raw disks. I might do that in the future. o.o Thanks for the thought tho!
