I was thinking of doing one click installs of woocommerce or Prestashop with nodeless preinstalled for small vendors, then they have a full open source store they can migrate away from me if they get bigger

Less exciting, but good enough. However, if you want to keep it small, I would jump into an easy QuickBooks integration. That could be a better path for small businesses.
