You cannot eat a polar bear liver. The level of vitamin A is to intense that’s it’s toxic to humans.

Despite eating plenty of beef liver because of it’s immense nutrient density I haven’t personally experienced vitamin A toxicity, but I imagine beef liver has to be somewhere on the right side of that vitamin A spectrum so it’s not difficult to overdo it.

I just take a handful of ancestral blend ground beef (55% ground chuck and 45% ground organs (liver, heart, tongue, spleen)) and mix it with my regular ground beef to make sure I get the variety of vitamins and minerals from my organs without overdoing it.

Cooked rare, Redmond’s real salt, sometimes with a drizzle of local raw honey. Boom! Breakfast.
