Finished product. Candied Lake Trout marinated in gin, brown sugar, kosher salt, black pepper and maple syrup. Smoked at 170°F on “Super Smoke” on a Traeger Ironwood smoker with competition blend and whiskey barrel pellets. Worked really well.
