I've heard criticism about NOSTR that the IP address is public? I'm not a technical guy, is this (still) relevant?

It is, but at least you have the option of going Tor only.
Using only Tor isn't fun. Have you ever tried it for an extended period of time with your main account? ;)
On amethyst its fine. Images are a little slow to load but that's about it
