Umbrella? Umbrel?

Umbrel can be put on a raspberry pi. I'm also a tech simpleton, though less so after bitcoin rewrote significant parts of my brain.

I'd go with StartOS, though. More functionality, good documentation and guides, looks snazzy.

They've been saying they're moving away from raspberry pi's though, so idk how long it'll still serve you if you build it yourself. Definitely get the latest version of rpi - my outdated version is feeling its age.
