The peat stuff is very interesting but a tad overwhelming and confusing. What’s the appropriate mental model to take from peat?

one reason Peat can be overwhelming is because Ray himself was never dogmatic, so there's a lot of nuance and flexibility

metabolism is health. things that increase the metabolism are generally healthy. if you look at caloric intake and body weight data historically, you'll find that Americans eat less calories on average but are more obese than ever.

the other side of the coin is that things that slow the metabolism (or damage metabolism) are generally unhealthy. our environment is toxic. pesticides are a big one. seed oils are a big one. extreme fasting over long time periods. restrictive diets.

the relationships of the hormones are a big focus. I'd say one big thing that separates Peating from a lot of other "ancestral" type diets is that Peaters are not afraid of self experimentation. since our environment is so fucked and we've all been damaged from the time we were born, a clean diet alone might not be enough to get us back on track. many Peaters use thyroid hormone, aspirin, B vitamins, progesterone, etc therapeutically.
