May I recommend going gnome/Linux flavor of choice on commodity hardware. Ubuntu is a good choice

Prefer Mac OS

Give gnome a try, once you get used to it you won’t go back. Maybe it’s just me, but gnome is what I’ve come to love

MacBook Pro level hardware, for $1000

I need a desktop for design and mac works best for me. I have a windows desktop as well with a decent display but it’s just not the same.

Wish someone made 5/6k monitors

LG makes a 5k2k 40” monitor.

Though that plus a spec’d out Mac Studio would put you in that $4k+ range.
