I have to admit my wife planned our trips - and she isn’t around right this second - we love playa Samara and stay there as much as possible - we also spent some time hiking around rincon de la vieja national park and volcano - you can’t hike the crater hike due to it being active still by the looks of things but there are some hot springs up there and a couple waterfalls that are well worth the hike!
