How do you change the zap default? I get 500, 1000 and 1500 only options.
Depends on the client.
I use Amethyst for Android mostly. I also frequently re-download the program for updates from the GitHub page. For this client I long press (hold down) the ⚡ button until a menu appears where I can set new amounts.
If you're using Damus or another client I'm not sure. Functionality and options will vary client to client.

Nostr is the "protocol" but not an App. It's just the set of rules all of this needs to follow to work together.
All the clients work differently. Amethyst, Damus, Snort.social, Nostrgram.
If you use a mobile phone app client remember to update it frequently as they're all essentially in testing or beta mode and being developed every day or so.
