I use to make schnapps from ripe bananas.

Excellent flavor alcohol of almost 50º !

interesting. I grow #bananas & the thought never crossed my mind. narrow-minded like I was wearing blinders. now I'm off to search for recipes. thx!

Any fruits with high level of sugar are very good to distill for schnaps.

Put all the over-ripe fruits into a barrel and let them ferment for about 2-3 weeks (depends also the temp). Mix them every day until it gets like a pure.

When you have a strong smell of fermented fruits, use a distill recipient and with a small fire distill it slowly, for the "first hand".

Once you boiled / distill all the material, distill it again. Don't worry about the weird color you get at first hand. With the 2nd distill round, the alcohol will get clearer and stronger.

If you want stronger, distill it 3rd time, but you will get less quantity of final schnapps.

All depends of the sugar level and the fermenting process.

More sugar = more alc in the 1st and 2nd round.

Hint: you can add in the mix also other fruits with more sugar level.
