Can anyone guide me to a blog that shows the OpSec differences between having sats in separate wallets (one wallet for each UTXO)
separate address (one address for each UTXO)
or
all utxo's in one address ?

If you use a good wallet like sparrow wallet you can simply use a new receive address for every utxo and then choose which ones you want to spend from using the built in coin control.

Do you think that a new wallet for every utxo is overkill, or just potentially confusing?
I asked because each of them is a secret that shouldn't ben shared.
Why would you use a new wallet? You use a new address, and manage the utxo’s in the single wallet. Then you can combine them as well if your spend is more than a single utxo. There are only disadvantages of creating multiple wallets (e.g. how do you secure them).
