If I have Tor on my node do I turn off with Tailscale?
Also, I have my channels and Olympus on my Zeus app now. How does it determine which to use when routing?

Using Tor on Lightning (9735) is different than using Tor for your remote connection.
When you make a payment on LN your node tries many routes starting w the cheapest one. W ZEUS you can always choose your first and last hops by picking them under the settings tab on the payment request view.
