8 hours later, here was the result of my keto corn tortilla chips experiment...
Only thing I did wrong was forget to go back to the dehydrator after 1.5 hours to score the spread mixture before it was fully dried, and make them into nice tortilla chip shapes. No biggie, they just looked more rustic. 
The color was great. Smell? My place smelled like a Frito's Corn Chips plant while these were dehydrating, I swear. The texture was nice and crispy, but more fragile than I'd like (I think the recipe creator's mixture wasn't spread out as thinly as mine). Another thing about texture of these, I think this needed less additives (recipe called for golden flax meal AND xanthan gum, both of which I find can make things a bit slimy) because the slimy mouth-feel is what happens sometimes with things like salad dressings or soups, but I didn't expect it with a dry, crunchy snack. The taste was...well, like baby corn. Honestly, if you've ever eaten creamed corn out of a can or just eaten canned baby corn, that's what these chips tasted like.
However, after dipping into some of my homemade salsa, the corn taste was more toasty and a bit more like a corn chip. 
Here's what the chips looked like after shallow-frying for 2.5 seconds in tallow. Looks burnt, but I think the camera added more color. The taste was more mellow after frying, and a LOT less like baby corn/creamed corn, more toasted-like. 
I think this experiment went well, but if I do it again, I'll probably roast the corn in the oven to get a little char and toasting going, in hopes of eliminating the very sweet creamed corn flavor (can't try that now, I'm out of baby corn). #foodstr #cooking #keto #cornchips #lowcarb #tortillas #chips #diabetic #recipes #ketolishus #diabeticrecipes
