Does anyone else put tarragon in their potato salad? I don't see it in many recipes online. And dill and smoked paprika of course.

Dill and parsley, smoked paprika and some nice crispy gherkins to complement the soft texture of the potatoes.
Yeah I saw parsley in other recipes. I hate parsley. I like what tarragon does to it. I guess I'll just call it my own invention.
And celery for crunch since the gherkins won't be crunchy enough. But gotta have those gherkin bits - a critical part of the potato salad experience.
Here in NZ all the potato salads suck. So this Christmas I'm showing everyone how it is supposed to be done (except I'm using tarragon instead of parsley)
I also go heavy on the eggs.
