And about the taste, I don’t think I always consciously think about it, but yes, I make sure I get various tastes, various flavours, colors, various textures and enough protein and fiber and necessary carbs in my diet. Once you practice it for a while, you don’t even always have to think about it consciously, I think.
I like variety in tastes. Even bitter. Your might know about Shukto, one kind of veg preparation and a meal starter that's actually bitter in taste. I also consume lots of bitter gourds. The only taste less preferable to me is sour so I tend to avoid it, yet it almost regularly makes a part in my diet through sour-yogurt!
