Let's say I agree with your premise. The problem is how much monetary inflation is okay? 1%/year? 2%? 8%? Who decides that? Satoshi decided to cap it, and so far we've had consensus on that.

gold did pretty well for a few thousand years at between 1-2% annually.

but I suggest we err on the side of caution and use something more disinflationary.

(in the above meme the .6 units every 2 minutes refers to the emission schedule of Monero. today that's about .6% supply inflation and that percentage of course decreases with every block)
