Bit of a tangent but my missus is used to cooking in non-stick pans but I hate them and use stainless steel.

Recently she’s been on a tear cooking various types of pancakes but was having problems with sticking and the universal rule of the first pancake always being ugly AF.

This week she made a great batch and apparently it was because she coated the greased pan with onion at the start. I hadn’t heard of that but apparently it works!

Interesting! Though I'm not sure if I'd appreciate the onion taste on the first pancake which, as you said, is always ugly AF! Seems to be pancake law.

Not all pancakes are created equal!

She makes savoury ones for the most part, a trace of onion isn’t an issue then.

Doughy sweet western style pancakes it might not be great for, but savoury ones more akin to an omelette it’s fine.

We need more research into the cause of first pancakes going to shit. We all know this phenomenon but it’s never been explained!

I see what you mean. Over here pancakes are more like crepes so most of the time you'd put sweet stuff on them like berries, yoghurt or chocolate spread. I love chocolate and banana. For savoury the dough is a little different and I love those with like spinach or other tasty fillings.

The best I ever had was a melted snickers bar in a pancake 😉

Sorry, clicked send to early. For the phenomenon I believe it's related to the heat of the frying pan and temperature of the butter or oil. I had a few rare occasions where the first one came out just fine but yes, very rare. Maybe we should ask GPT?
