Can anyone point me to some info on relays? Some notes only seem to go to 1 relay. I don't really understand how and/or which relays to use.

Can try to add some relays your follows already use.
For example, client Coracle shows who is using certain relays on a suggestions list.

Most clients will have a settings option, withing that you can find "relays" in there you should be able to add or delete relays.
