Why would Russia ever do that?

Poland is a part of NATO which is the only shield they need (look up article 5 if you want to know how an attack on any NATO country would be handled). The EU is irrelevant in that regard

Lots of countries are going to head back to the USSR. It's just a normal cycle of human behaviour

An eastern bloc country looking at the current state of the EU, would make a lot of sense for them to consider aligning more with Russia moving forward

Actually it's the other way around. Something fishy is going on with the human rights, privacy, control, monetary sovereignty etc. in the EU. It's getting closer and closer to authoritarian regimes like in Russia or China. And people don't like this.
