Receiver offline:

- Lock ecash to receiver's pubkey (P2PK)

Sender and receiver offline but they anticipate a payment in the future:

- Lock ecash to receiver's pubkey

- Just send ecash

Note: all locks can have an additional timelock that allows the sender to redeem them back (in case the payment never happened for example).
