I came across a new master's degree from a leading European business school: Master in Financial Technology.

While "digital assets" aren't even mentioned in the curriculum (a mention of bitcoin would have shocked me), they instead list a concentration in "Central Banking & Financial Regulation," which aims to educate students "about the vital role and activities of central banks and their significance for financial systems."
