This is all done just with env variables. You can also specify a relay selection that Coracle is forced to use in order to create an entirely separate instance of Nostr.

Yeah, that should work fine — there's a companion server that goes along with it (dufflepud) which handles image uploads, relay discovery, and link previews. It's mostly optional, but you can also self-host that or use the default.
