I need to figure out the phone thing. I like having one, but I hate having one. It knows every place I go. It hears everything I say. And I bought the fucking thing. I feel like a fool, honestly. The thing is, they really are amazing tools. Or could be.

The lead here seems to be GrapheneOS. I haven't looked into this deeply enough either but as I understand it you buy a stock Pixel 6 or 7 and then install.

I flashed Calyx, but now seems the cool kids are back to Graphene. Can I follow the steps to flash graphene on stock Android to flash over Calyx?

You can, no flashing back and forth required, simply loading up the web installer and following the steps and instructions should do the trick.
