If the government can easily change the rules according to their desires and interests, would you still want to trust FIAT money?
I already do not trust it. It has worked for a while but as more information is available we are seeing how corrupt it is and will still be. Importance of blockchain goes way beyond money. It is about accountability and a trustless system.
