Thinking of turning one of these into an air gapped cold wallet.

They don't have wifi or Bluetooth connectivity.

All I'd be using it for is generating QR codes and taking photos of QR codes.

I've been down this rabbit trail... I didn't trust the hardware manufacturer because wireless (cell/wifi/bt), right? So the simpler the device the less attack surface? What about the FM radio? etc, etc, etc... Why not do it manually with paper wallets? I finally bit the bullet and bought a hardware wallet that supports QR codes...

Now, I'm all worried about trusting the software and verifying the content of those QR codes! LOL...

I would not do this personally because there are too many risks, footguns, and attack surfaces. Unless you're just wanting to do it for fun then use testnet.
