500 g flour

10g salt

15g sugar

15g shortening/butter

20g yeast

350ml water

Mix 15min rest

low speed 2 mins

medium 7-8 mins

Take out of bowl and place on floured surface for 10 mins to rest

7.5 oz each makes for 15” sub rolls, so divide by 4

Round each in a circular motion to make round dough balls

Let rest under tea towel for 10 mins

Roll flat to knock air out, flouring as necessary to not stick to pin/board

fold and roll the top back toward you

Roll out with palms of hands to make 15” long

Spray down to so surface is wet

Proof for 20m (Judge to your best knowledge, Preference)

Can cover with parm, a couple oz of cheese or whatever

One more squirt of water

Preheat oven to 450F, then drop to 375F once you put them in.

Squirt to get some steam in the bottom of the oven (so it doesn’t crack)

17m worked for him (15m-20m (Gauge by sight)

I was going to suggest a flour with higher protein content. That might help you build a denser bread.
