I was dusting off my Geyser Project and noticed that the nostr keys associated with that project are not mine. Is there a way to change my nostr keys and extract the sats?

Great question! Not yet, we're not comfortable in storing your personal private keys so we don't allow that. In the future we're hoping to make geyser fully nostrified but that's not our current focus.
How would I go about getting the sats earned on a project off? I may simply be missing where the sats are kept internally and cant find the "send" button.
