I think any router that is capable of running OpenWRT is sufficient
UniFi, it’s a step up from residential models and is found in many bars, restaurants, and retail stores.
FritzBox are good but not sure if they can do subnets
open source pfsense (Netgate) on good FreeBSD hardware or VM
First step up would be a beefed up OpenWrt box, GL.iNet have really nice hardware, easy to buy and run. UniFi if you want to get fancy about it, but it's much more work and probably an overkill.
Asus router with Merlin, good solid well supported project that has been around for a long time.
