Thank you for asking. It is raw (unpasteurized) Wildflower (reflective of the seasonal nectar flows, such as (at this moment) blackgum (black tupelo), wax privet, blackberry, palmette, assorted wildflowers, etc. We also have a lighter colored honey from one primary nectar source called Gallberry (aka inkberry), cousin of yaupon holly. It is slower to granulate.
