It is raw (unpasteurized) Wildflower (reflective of the seasonal nectar flows, such as (at this moment) blackgum (black tupelo), wax privet, blackberry, palmette, assorted wildflowers, etc. We also have a lighter colored honey from one primary nectar source called Gallberry (aka inkberry), cousin of yaupon holly. It is slower to granulate.
