Coarser grind or even lowering your brew temp a bit also affects bitterness as you don’t want to scorch it. I tend to go 1:2 which also affects bitterness levels.

I started with 1:2. Raised it to accommodate tastes, tho still quite bitter.
Haven’t messed with temps, much. Have been reading that 95c is kind of the goal. I can definitely lower it to maybe 88-90c to see how that affects it.

I have found that it varies depending on your personal taste. I experimented a lot and I didn't get it right for a while. 🙂
