Hey why do some of the gift card purchases withdraw immediately and some take awhile or never do?

Do you mean the rewards for the purchases? If so, rewards earned from credit card purchases will stay as "pending" until the transaction settles (up to 60 days). On the other hand, rewards earned from bitcoin purchases can be withdrawn immediately due to bitcoin having final settlement at the time of purchase.
