Start with a very very hot pan some oil get it smoking and add your scallops and here it sizzle.. the trick to scallops not sticking is a very very hot pan

And you don't wanna over cook scallops they get like rubber. Under cook them for beat flavor 😋

Don't forget deglazing the pan, white wine , onions and a bit of brown sugar! Ot would be magical

Let it set in your pocket for 25-35 minutes for extra flavor
