As I grew older and had more experience in the kitchen, I found out the process of making something decent out of the left overs - sometimes really challenging- has always triggered much creativity and it was also very rewarding. I must say when it comes to #zero #foodstr #waste I’m quite radical.

What recipe do you use for the Hummus? I am a big fan, but today I used too much Tahini …

For 250 gr of chickpea, 2-3 tablespoons of Tahini would be enough, since it can ruin the whole thing, I suggest you add 1 tablespoon and gradually add more to adjust to your taste. You can always add Tahini to the blend later. Go strong with garlic and lime, moderate amount of extra virgin olive oil and dark cumin and zaatar for the final touch. Let it rest in the fridge for half an hour for proper ingredient infusion. Serve with more olive oil and some 🌶️ flakes.

In case of too much Tahini, add 1 tablespoon of full fat thick yogurt, greek style, or even sour cream for enhancement.

Thanks!
