I usually cook enough dinner to ensure there are leftovers for lunch. But failing that, my go to is german pancake. Melt 4 tablespoons of butter in a cast iron skillet. Mix 4 eggs, 1 cup flour, 1 cup milk, 2T sugar, 1t baking powder. Pour it in the skillet. Top with apple or peach slices and cinnamon-sugar if you're feeling fancy. Bake for 22 minutes at 350.
