You can install android, not sure if there is a Linux OS for phone.

Any idea if there is an OS that I can use for IPhone that is comparable?

Also would this allow me to install apps not hosted on the “App Store”?

I don't think Apple devices are easy to change the OS, Apple makes it difficult. Same with blackberry and windows mobile.
