Ubuntu and Mint are both based on Debian, so if you want a more barebones and self-setup experience you can try vanilla Debian.

If you wanna try something not Debian based and a little more advanced you can't go wrong with ArchLinux.

Almost all distros in existence are based off either Debian or Arch.
