I haven't had time to hunt in a long time. Luckily I have a friend who doesn't like fooling with the necks. Venison neck roast cooked in a Dutch oven is epic.
I split the neck and vacuum sealed. My family will get close to 10 meals out of this.

it is really good and hearty. I use Guinness as the liquid and it gives it a great stout taste
