if something actually usable (like maybe Fedimint) takes off I guess I would not mind. Fiat is designed for spending so... checks out.

Fedimint is lightning though. Getting from fiat to lightning is harrowing. For a relay to accept fiat, it would need a payment processor, which implies KYC and legal liability to censorship.
