When money won't be able to be insidiously confiscated through inflation, the hope I've heard people express is that governments will curb their expenditures, because taxation is much more visible and highly unpopular.

Somewhat agree, but the past few years have shown us that governments are perfectly comfortable carrying out unpopular measures, and the hungry apparatus will likely seek to replace the lost funding through high taxation.
